When the pot begins to boil over, it’s the equivalent of an allergic reaction. This is because there is an imbalance of heat and fluid in the body. Saturated fats break off into long-chain and medium-chain triglycerides (and are generally bad for you in large amounts). Beneath long-chains are the “bad fats”, AKA the ones that really aren’t good for you. Coconut oil comes from the medium-chain triglycerides and is one of the few types of saturated fat that can be good for the body. Unsaturated fats (the “good fats”) split off into monounsaturated and polyunsaturated. Omega 3 and Omega 6 fatty acids fall under the polyunsaturated side.
